“I was able to complete about half of my major all online, and as a busy girl, that was so incredibly helpful. I completed all of my Gen Eds at a fraction of the cost and applied them to my current bachelor's degree! Studying at RCBC was a total no-brainer for me,” Engelhardt shared.
“Our faculty members possess extraordinary expertise and we’re grateful that they are willing to volunteer their knowledge with the community,” Cioce said.
“I see many students struggle and talk about quitting. I tell them my story and encourage them to keep trying. It took 32 years to put on this cap and gown and as long as I'm working at RCBC, I will continue to encourage our students to never give up on their dreams. “I have been in business my whole life, and I think women in business have come a long way. I love working with people and marketing to determine what is going to appeal to consumers, really help them and implement the plan,” Young said.
Crêpes have always been one of my favorite desserts. The delicate French pancakes are mildly sweet and quick to prepare. Crêpes are very versatile and can be served for breakfast, lunch, dinner or dessert. They can be sweet or savory, filled with cooked fruits, jams, meats, vegetables or cheese. To complement the dish, add toppings such as fresh fruit, whipped cream, chocolate syrup or ice cream. The options are endless.

“This is an honor that could go to so many of the deserving faculty and staff I get to work alongside to serve our students and help them achieve their goals. I am a better educator because of our students but also my colleagues. I enjoy being a lifelong student of higher education, as I learn from both my colleagues and our students,” Kealey shared.
