Crêpes have always been one of my favorite desserts. The delicate French pancakes are mildly sweet and quick to prepare. Crêpes are very versatile and can be served for breakfast, lunch, dinner or dessert. They can be sweet or savory, filled with cooked fruits, jams, meats, vegetables or cheese. To complement the dish, add toppings such as fresh fruit, whipped cream, chocolate syrup or ice cream. The options are endless.

Now, don’t get me wrong; I absolutely love Valentine’s Day for the sentiment, though not nearly as much as I love it for the aesthetic and the excuse to indulge after having abandoned my new year’s resolution to cut back on sugar. So, join me and celebrate your loved ones by baking fudgy brownies with tart cherries, decorated with a white chocolate drizzle and a heart made from the bottom of yours (but mostly made from tempered white chocolate).

In class, I recently made French Apple Tart, which really put me in the fall mood, as I sliced up the juicy granny smith apples and smelled their tartness baking in the oven. The apple compote filling was soft but not too chewy, while the apples on top were cooked but still had a nice crispness to bite into.

This is not an ordinary quail dish, as you may have encountered at a local restaurant in South Jersey. This quail dish is prepared in two ways by using and consuming all the bird has to offer. When I had prepared this dish in the past for a family occasion, sadly I wasn’t 100 percent satisfied with the result because I believe it can always taste better. Since then, I have been brainstorming and honing in an attempt to perfect the dish. As a result, I believe the dish has almost reached its peak, which is the version I’m sharing here.
